Here are some easy to prepare breakfast recipes that you can use to fuel up your morning.

MICROWAVE EGG, SAUSAGE & CHEDDAR BREAKFAST TORTILLA


Plain scrambled eggs in the morning? Make it more exciting and appetizing by adding a spicy sausage and creamy cheese. A perfect breakfast on-the-go burrito.


INGREDIENTS:

  • 1 Egg

  • 1 fully-cooked breakfast sausage, chopped (3/4oz.)

  • 1 tbsp. shredded Cheddar Cheese

  • 1 whole wheat flour tortilla (6-inch)

DIRECTIONS:

  1. Coat 2-cup microwave-safe cereal bowl with cooking spray. add egg: Beat until blended. Sprinkle with sausage.

  2. Microwave on high 45 seconds stir. Microwave until egg is almost set, bout 15 seconds longer.

  3. Top egg with cheese. Place on tortilla: fold bottom of tortilla over egg, then fold in sides.

AVOCADO AND POACHED EGG SANDWICH

Begin your day with this savory avocado and poached egg sandwich. Just one bite will turn you into a morning person!


INGREDIENTS:

  • 1/2 ripe avocado

  • 1 large or extra-large egg

  • 2 small pieces whole grain or whole wheat sliced bread

  • 1 teaspoon extra-virgin olive oil

  • 1 teaspoon lemon juice or vinegar (white or apple cider)

  • 1/2 cup salad greens of choice or baby spinach, optional

  • 1/2 teaspoon kosher or sea salt, divided

  • 1/4 teaspoon black pepper

DIRECTIONS:

  1. Toast bread.

  2. Poach eggs by bringing 2 inches of water with 1/4 teaspoon salt and lemon juice or vinegar to a simmer over high heat. Do not allow water to boil. If it begins boiling, reduce heat.

  3. Crack egg into a small bowl or mug and slide egg into water. Simmer for 3 to 4 minutes until egg white is solid, but yolk is still liquid. Remove with a slotted spoon and place on paper towel/napkin to absorb any excess water. Place on toast.

  4. Meanwhile, smash avocado with olive oil, 1/44 teaspoon of salt and black pepper. Use a potato masher or pulse in a food processor or blender until pureed but slightly chunky. Spread onto one side of toast, top with salad greens or spinach if using, and place over egg toast.

PANCAKES ON-THE-GO

It's really hard to prepare breakfast every weekdays specially if you are not a morning person.

Try this pancakes on-the-go, this delicious and yet easy to prepare recipe will fit to your busy weekday mornings.


INGREDIENTS:

  • 1 (12 oz) pkg. breakfast sausage

  • 2 cups Pancake mix

  • 1/2 tsp. ground cinnamon

  • 2/3 cup water

  • 2/3 Butter Flavored Syrup

DIRECTIONS:

  1. Cook sausage in large skillet over medium-low heat for 10 to 13 minutes or until golden brown and no longer pink

  2. Spray Skillet or griddle with no-stick cooking spray. Heat skillet over medium heat or electric griddle to 325°F.

  3. Combine pancake mix and cinnamon in a medium bowl. Stir to distribute spice. Add water and syrup. Stir just until large lumps disappear.

  4. Pour slightly less than 1/4 cup batter for each pancake onto hot skillet or griddle. Cook about 2 minutes per side or until light golden brown. Roll one pancake around each sausage. Wrap in napkin/tissue, if desired.
